Psychedelic salad for February

There are no doubts that beautiful food makes a moment of eating more enjoyable. Even a simple salad becomes an amazing dish when you play with some color, texture, flavor and interesting vegetables. Why I say that? Because my last visit to a local market ended up with a new affair… I felt in love with a romanesco cauliflower!
Psychedelic salad
Its vibrant green color and psychedelic shape made me want to use it immediately. The romanesco is rich in vitamins K and C, and it also has a lot of fiber. The taste is something between cauliflower and broccoli. It combines well with sweet pomegranate seeds which fight bacterial infections, improve memory and heart condition. And they are even believed to fight cancer!

So today I am cooking Romanesco cauliflower and pomegranate seeds salad!

Ingredients:

  • green and purple lettuce, rucola
  • cherry tomatoes
  • soya sprouts
  • green olives
  • romanesco cauliflower
  • pomegranate

Sauce:

  • olive oil – 1 tablespoon
  • mustard – 1 tablespoon
  • honey – 1 tablespoon
  • a little bit of vinegar
  • a pinch of salt

Psychedelic salad

Preparation:

  1. First of all cook the romanesco cauliflower for a few minutes and then leave to cool.
  2. Meanwhile cut the cherry tomatoes into quarters. Open the pomegranate and take out its seeds.
  3. Place lettuce on the bottom of a bowl. Add the soya sprouts, tomatoes, olives, romanesco cauliflower chunks and pomegranate seeds. Put the sauce over the salad. Enjoy!
