
Guys, it’s official: Winter is coming! Am I the only one looking desperately for a comfort food these days? I bet I’m not. After having fun outside and getting home almost frozen, it’s needed to restore energy and warm up our bodies. We should also look for ingredients that prevent cold and keep us healthy to enjoy winter time!
Have you heard already about a ‘lecho’? It´s a typical Hungarian dish, a spicy stew consisting mainly of vegetables. There’s an onion and garlic with their antibacterial powers, a red pepper with a huge dose of vitamin C boosting an immune system, an eggplant preventing infections and more! Traditionally, the Hungarians add also some meat (ex. sausage) but my version does not include it and believe me, it doesn’t make a difference. It’s really tasty, filling and light at the same time! We don’t need extra calories, even in winter, do we? 😀
Ingredients:
– 1 eggplant
– 1 courgette
– 2 onions
– 3 red peppers
– 1 can of chopped tomatoes
– 1 garlic glove
– olive oil
- salt, pepper
- sweet paprika
- spicy paprika
– bread to accompany
How to prepare it?
- Cook the onions with some olive oil until translucent
- Add chopped garlic
- Cut all the vegetables into cubes and add on the pan
- After a few minutes, add tomatoes with a juice from the can and let it simmer
- Add salt, pepper and sweet paprika
- Simmer for more 20 minutes
- Toast some bread
